Vegan/Gluten-Free/Dairy-Free/Nut-Free

Skill Level: Beginner

Yield: 4-6 servings

Prep Time: 5 minutes/4 hours for tea to steep

Cook Time: 5 minutes

Equipment Needed:

  • Medium-sized saucepan

  • Whisk

  • Citrus juicer

The Recipe:

A rocks glass with ice and a bright fuchsia liquid inside, garnished with a lime wheel. There is a half lime partially in frame, as well as a second glass of ice and bright liquid. There is also a carafe of dark pink liquid in the background.

Ingredients:

  • 4 hibiscus tea bags

  • 1/2 cup sugar (or sweetener of your choice)

  • 1 lime, juiced

  • Club soda, to taste

Procedure:

  1. Make the hibiscus tea: Bring 4 cups of water to a boil. Transfer the water to a container with a cover. Add sugar, and mix with a whisk until sugar is dissolved. Add the hibiscus tea bags. Allow tea to cool on countertop until it is no longer steaming, then cover and transfer to fridge. Refrigerate for at least 4 hours.

  2. Transfer refrigerated tea to a pitcher and add the juice from one lime. Mix well.

  3. Fill glasses with ice, then add tea to each glass, leaving 1-2 inches of room in each glass.

  4. Top each glass with desired amount of club soda.

To Serve: Garnish with lime wheel, if desired.

Tips:

  • Resist temptation to skip the step of allowing the tea to steep for at least four hours; you want to make sure you are getting a full-flavored tea.

  • I love this drink as is, but you could experiment with different flavors of soda water for an additional twist of flavor. You could also omit the club soda all together if you are not big on fizz.

  • This is a delicious mocktail that could easily be turned into a cocktail with the addition of 2 ounces of vodka or another spirit of your choice.

The Story:

I actually came up with this drink for work! I was planning to have my students make Lo Mein and cream cheese wontons, and I wanted to come up with an interesting drink that was also a little on-theme with our lab. After deciding a tea-based drink would be unique and fun, I did a little research and came up with this recipe.

The Hibiscus Tea Spritzer was a huge hit. Tart and just a little sweet, with the perfect amount of fizz from the club soda. The color is so stunning as well! I think this tea spritzer would be a beautiful addition to a brunch or even dinner party. My kids at home also really enjoyed this fun mocktail :)

I'm totally into the idea of coming up with more tea-based drinks, what do you think?!

Cheers!
